Amazing Sausage and Cranberry Stuffing

Shake up your Thanksgiving day favorite with this amazing sausage and cranberry stuffing. This recipe is easy to assemble and will likely become a Thanksgiving favorite for years to come!

Amazing Sausage and Cranberry Stuffing

This sausage and cranberry stuffing is a perfect Thanksgiving pairing. This recipe is full of flavor and is a much healthier way to make this holiday favorite!

Ingredients Method Video Notes

Ingredients
  

  • 1 lb Italian sausage
  • 1 pkg of giblets and neck from Turkey
  • 1 boule of sourdough loaf
  • 1 large onion diced
  • 2 stalks celery chopped
  • 1 1/2 C fresh cranberries chopped
  • 2 tsp italian seasoning
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper

Method
 

  1. Preheat oven to 350degrees F.
  2. Add giblets and turkey neck to a medium sauce pan with water. Bring to a boil. Lower heat and simmer for 40-50 minutes.
  3. Chop homemade bread into bite sized pieces. Spread in a single layer on a baking sheet. Bake 5-8 minutes, or until fully toasted.
  4. Cook sausage in a large skillet over medium heat, breaking up clumps until evenly browned. Remove from skillet and set aside.
  5. Add onions and celery to the skillet, cooking over medium heat. Cook until onions become translucent.
  6. Combine toasted bread, sausage, onions, celery, freshly chopped cranberries and seasonings into a large bowl. Mix well.
  7. Add turkey broth. Mix well.
  8. Stuff turkey and cook according to turkey baking directions
    Or pour stuffing into a casserole dish and bake until top is golden, about 40 minutes.

Notes

Make ahead
  • Freezer: add stuffing mixture to a casserole dish and allow to cool completely. Add lid (if there is one), wrap in plastic wrap and place in freezer until you are ready to bake. Remove from freezer and allow to thaw in the fridge. Bake following instructions above.
  • Prep 1-2 days ahead: assemble stuffing and store in the fridge in an airtight container. Bake following instructions above.
