Method
- Preheat oven to 350degrees F.
- Add giblets and turkey neck to a medium sauce pan with water. Bring to a boil. Lower heat and simmer for 40-50 minutes.
- Chop homemade bread into bite sized pieces. Spread in a single layer on a baking sheet. Bake 5-8 minutes, or until fully toasted.
- Cook sausage in a large skillet over medium heat, breaking up clumps until evenly browned. Remove from skillet and set aside.
- Add onions and celery to the skillet, cooking over medium heat. Cook until onions become translucent.
- Combine toasted bread, sausage, onions, celery, freshly chopped cranberries and seasonings into a large bowl. Mix well.
- Add turkey broth. Mix well.
- Stuff turkey and cook according to turkey baking directionsOr pour stuffing into a casserole dish and bake until top is golden, about 40 minutes.

Make ahead
- Freezer: add stuffing mixture to a casserole dish and allow to cool completely. Add lid (if there is one), wrap in plastic wrap and place in freezer until you are ready to bake. Remove from freezer and allow to thaw in the fridge. Bake following instructions above.
- Prep 1-2 days ahead: assemble stuffing and store in the fridge in an airtight container. Bake following instructions above.
